Baked Puffed Yams

Conscious Cuisine®
Makes six servings

2 pounds yams, peeled and diced
1 cup hot, low-fat milk
2 eggs, beaten
1/4 cup grated, sharp cheddar cheese
1 tbs. butter
1 tsp. sea salt
Pinch of pepper

Preheat the oven to 350 degrees F. Lightly grease an 11 x 9-inch baking pan.

Place the yams in a saucepan, and cover with water. Bring to a boil, and cook until soft. Drain, place in mixing bowl and mash.

Add the hot milk, eggs, cheese, butter, salt and pepper. Beat with an electric mixer on high for four to five minutes, or until yams are puréed. Spread into prepared pan, and bake for 20 minutes.
