Sweet Cinnamon Mashed Yams

Makes 10 servings
2.5 pounds yams, peeled and diced
1 quart water
1 tsp. sea salt
1 stick butter, cut into pieces
1 1/2 tsp. cinnamon
1/4 tsp. white ground pepper
1/4 cup maple syrup
Heat the water, yams and salt in medium saucepan. Bring to a boil and cook for
35 minutes. Drain the yams, and place in mixing bowl. Mash with potato masher,
and stir in the remaining ingredients and mix well.
