Mango Salsa
Makes 4 1/2 cups

4 cups chopped mango
1 tsp. finely shredded fresh mint
1 tsp. finely
chopped fresh cilantro
1/2 cup unsweetened orange juice
2 tbs. finely
chopped red onion
1/2 tsp. finely chopped jalapeño chili
2 tbs. finely
chopped red bell pepper
2 tbs. finely chopped green bell pepper
In a mixing bowl, combine all the ingredients and mix well.
Cover and refrigerate for about one hour before serving.
